RECIPE: Nut butter and berry chia jam frozen bananas

A fun, healthy twist on peanut butter and jelly sandwiches.

Ingredients

2 bananas
1 tablespoon natural nut butter
1 tablespoon berry chia jam (recipe below)

Directions

FOR THE BERRY CHIA JAM
10 to 12 ounces (around 2 ½ cups) frozen raspberries
10 to 12 ounces (around 2 ¼ cups) frozen blueberries
¼ cup chia seeds
2 tablespoons orange juice (about ½ medium orange, juiced)
Up to 4 tablespoons maple syrup (optional), to taste

TO MAKE THE BERRY CHIA JAM
In a medium mixing bowl, combine the frozen raspberries and blueberries, chia seeds and orange juice. Cover and let the mixture defrost for about three hours at room temperature, or overnight in the refrigerator. Once the berries are defrosted and soft, use a potato masher to mash up the mixture to your desired consistency.

Taste, and if you’d like a sweeter jam, stir in some maple syrup. If the chia seeds aren’t nice and plump yet, let the mixture rest for about 20 minutes to let them absorb some more moisture. Store leftover jam in the refrigerator, covered, for about 5 days.

TO ASSEMBLE
Peel bananas and cut into 1/2 - 3/4-inch-thick slices. Add a small amount of nut butter to a banana slice and top with a small amount of chia jam. Top with another banana slice to make a sandwich. Continue until all the banana is used up.

Line a baking tray with a silicon mat or baking paper and place the banana treats on the tray in a single layer, ensuring the bites to not touch (this keeps them from clumping together). Freeze for two hours (or longer) and then transfer to a freezable container. Enjoy straight from the freezer.
