RECIPE: Let’s taco ‘bout it

You don’t have to limit tacos to Tuesdays with these healthy swaps

It’s your go-to Tuesday night dinner, but with some healthier twists, you can enjoy tacos guilt-free any night of the week! Diana Rosito, a wellness coach with the Y Healthy Living Center at Baptist North Medical Campus, shows us some simple swaps that will take your taco night to a new and healthier level.


Corn tortilla tacos (makes one taco)
1 corn tortilla
Shredded chicken
1 tbsp. of your favorite salsa
2 slices of avocado
1 tbsp. reduced-fat mozzarella or fiesta-blend cheese
1 tbsp. plain Greek yogurt
Cilantro

Heat the corn tortilla in hot pan (no oil or cooking spray necessary) until soft. Transfer to a plate. Add shredded chicken, salsa, cheese (limit to one tablespoon), avocado and Greek yogurt. Garnish with cilantro. Enjoy!
