RECIPE: Healthy breakfast food swap

No one wants to start the day on an empty stomach, but few people want to spend those precious minutes before work cooking. Oatmeal is a great option for breakfast because it is quick, packed with nutrients, high in fiber and will keep your belly satisfied for hours. But many store-bought versions are loaded with sugar.
Diana Rosito, a wellness coach at the Y Healthy Living Center at Baptist North Medical Campus, gives us a quick, yet healthy option.
Power Oatmeal with Berries, Walnuts and Chia Seeds
1 c. unsweetened vanilla almond milk
½ c. rolled oats
Fresh sliced strawberries
Fresh blueberries
1 tbsp. chopped walnuts
Chia seeds
Agave nectar (optional)
Boil vanilla almond milk. Add rolled oats, and stir constantly until thickened, for about a minute. Transfer to bowl. Top with strawberries, blueberries and walnuts. Finish with a sprinkle of chia seeds, then drizzle with agave nectar for added sweetness.
