RECIPE: Sunny citrus salad
This fresh salad is healthy and tasty, and perfect for hot summer days.

Salad
1 Mandarin orange, segmented
1 blood orange, segmented then halved
2 radishes, sliced
Slivered almonds (to preference)
Arugula spinach mix
1 avocado, sliced
In a large bowl, combine the arugula spinach mix and top with oranges
and radishes. If desired, top with almonds and avocado. Pour citrus vinaigrette over salad and toss.
Citrus Vinaigrette
1 small shallot, finely chopped
3/4 cup olive oil
1/4 cup Champagne vinegar or white wine vinegar
3 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
1/4 teaspoon finely grated lemon zest
Salt and pepper (to taste)
In a small jar; season vinaigrette with salt and pepper. Shake to blend.
